How does the Monferrina ravioli machine 780 work?
The Monferrina ravioli machine code 780 is a machine of professional derivation. In fact, it is equipped with a perforated tube at the bottom in steel suitable for contact with foodstuffs, capable of containing a large quantity of ravioli filling. As shown in the photo below, all the contents needed to fill the ravioli can be placed in the tube, with the composition you consider most appropriate, based on the recipe!
The stuffing tube
The container tube is placed vertically and, inside it, the food-grade resin piston is practically already assembled. This allows the contents to be pushed down to fill the ravioli. The plunger is connected to a steel rack that gently pushes down the filling as you turn the crank.
The actuating crank of the sheet-filling-closing ravioli coupling mechanism
La crankin fact, it operates both the mechanism for the downward descent of the filling and the 'calling' of the pastry. The special shape of the crank makes it unique. It is therefore important to store it carefully in order to operate the machine.
Once the machine is fixed to the workbench, it can be left mounted for frequent use. In fact, the tube containing the fillings can easily be unhooked via the mechanism at the top. In this way it can be moved and refilled with new fillings in order to continue processing.
Rollers for rolling the sheet
I rollers to hold the sheet support the dough with a 10 cm section. They are made of resin ideal for food contact. Four are supplied: two are spare. The dough sheet can be housed in the rollers, which are easily removable. Then it can be directed towards the sheet feeder trays. In this way, when the machine is cranked, the sheet of pasta is 'pulled in' automatically. Of course, the whole mechanism is synchronised to ensure that the size of the ravioli is ideal!
The drive and closing mechanism for ravioli
The image below shows theinside the Monferrina ravioli machine with the filling tube removed. At the front you can clearly see where the crank handle is mounted. When the crank is turned, the steel rollers for pulling the sheet rotate and, at the same time, the bronzed ravioli moulds also rotate. The pressure of the plunger causes the right amount of filling to drop from the filling tube. The two edges of the sheet end one at the bottom (to form the base of the ravioli) and one at the top, to close it. Finally, the ravioli comes out from the bottom towards the base of the machine.
Imperia Raviolatrice Monferrina ravioli machine 780: quality of materials and maintenance
The Imperia Raviolatrice Monferrina ravioli machine 780 is a high quality machine, as shown above. There is abundance of noble materials (stainless steel, anodised aluminium, bronzed elements, high quality stainless steel hardware). This guarantees excellent results in ravioli production and full compliance with food contact regulations.
Finally, the presence of quality rivets that can be screwed in allows the side trays and other parts of the machine to be removed to ensure proper cleaning. It is also important to remember that the machine can be 'self-cleaning'. In fact, by running only the dough sheet without the filling between the rollers, the rollers will tend to carry away most of the filling residue. This does not mean that cleaning is not necessary, but it is a simple method to simplify it!
