Monferrina extruder press unit for Nina, P.New, Cylinder is a kneading container equipped with a mixer. This tool is used to automatically make the dough and draw it through an extruder. Once the dough has been kneaded, the contents can be extruded. The press unit has an internal helix that pushes the contents towards the bronze die. It is drawn and then cut by the knife.

Finally, it is possible to purchase PFTE dies. These are accessories made of a special plastic suitable for contact with foodstuffs, of particular hardness to withstand the stress of extrusion. How is the accessory applied to Monferrina machines and how is it used?
Pasta machines Monferrina NinaMonferrina P.Nuova and Monferrina Cilindro are equipped with a single point of traction where accessories can be attached. This standard attachment allows various optional extras to be attached to Monferrina machines, which are interchangeable with each other.
The purchase of these replaceable accessories allows the machines in question to be used to make pasta and to be able to produce other types of preparations.
This kneading trough makes it possible to obtain a dough that will not be particularly refined. In fact, the dough does not need to be perfect or excessively moist. The proportions of water to be used are approximately 30% in relation to the content of flour and other ingredients. Therefore, considering the approximately 3 kg capacity of the mixer, we recommend using about 700 ml of water with 2.3 kg of flour.
Moreover, with this type of mixer, it is also possible to mix preparations based on different grains.
After about 10 minutes, the dough will be a relatively dry, moist but certainly not compact preparation. To the eye, the dough will be rough, almost lumpy, containing air bubbles inside and a less compact and smooth appearance than preparations made by hand or with other types of machines.
At this point you can start drawing the dough through the extruder included in the press unit accessory. The machine is equipped with controls that allow you to choose between the kneading phase and the extrusion phase.
When you start to extrude, dough will start to come out of the front of the press in the shape provided by the die. If it is long pasta, it can be cut by hand. Conversely, for short pasta, the handy rotary knife with speed variator will cut the pasta to size.
This is perfectly normal and means that the dough is ready for the next use with the La Monferrina Nina sheeter and drawing machine! In fact, the peculiarity of all the Monferrina machines is that there is no need to work the dough for a long and energy-consuming time because once it has been amalgamated, it will be made ready by the next stages of preparation.
Maintenance and cleaning of the La Monferrina press unit
Once used, the presses will always contain some dough residue inside. Since they are presses, some residue will always remain inside. But this is not a problem with proper maintenance.
In fact, it is only important to ensure that the dough left inside does not dry out. Therefore, after cleaning the outside of the dies, DO NOT use any objects but only a cloth. After disassembling them, you must avoid drying out the dough inside. We therefore recommend soaking the Monferrina bronze pasta dies in water, so that the dough inside remains soft. If you do not plan to use the Monferrina bronze dies for a long period of time, it is advisable to place them in the freezer and then soak them for a while before using them again.
Shaft and auger in the tank, on the other hand, can be safely washed in the dishwasher.
