Monferrina Nina professional pasta machine is a high-quality workbench tool for drawing and pasta production in small workshops and restaurants.

The basic version of the Monferrina Nina can produce pasta sheets in various thicknesses. In addition, it is equipped with 2 built-in dies for 2 or 6 mm wide noodles. In addition, with the 2 mm cutter, making a sheet of more or less the same thickness, you can also make 2 mm guitar noodles!

Accessories NOT included in Monferrina Nina and purchasable separately
One of the strengths of the Nina professional pasta sheeter is the possibility of purchasing separately the most useful accessories for the particular use to be made of it.
The machine is in fact characterised by high modularity. Not all accessories are necessary for the daily use of the Nina. They can be purchased at a later date or at the same time, but always by carefully assessing the uses to be realised.
The following accessories can be attached to La Monferrina's Nina pasta machine:
- Kneader with a tub capacity: 3 kg (total tub weight: 4.6 kg), fully demountable
- Press assembly weight/output: 14 Kg / 6 Kg, which can be used to make puff pastry and with which short pasta can also be made, thanks to the electric motor. It can be equipped with bronze dies to obtain rougher pasta or with PTFE (resin) dies to obtain a shinier and more transparent pasta
- Ravioli groups to obtain approximately 10 kg of ravioli now, in four different formats: 20×20, 34×40, 40×50, 70x70x70. Each of these is an accessory to be purchased separately
- Dumpling group Weight / weight: 22.2 kg / 20 kg. Dimensions: 250x360x465 mm
- Further drawing to obtain long pasta in different formats. Straight cuts (1.5-4-8-24 mm) and festooned cuts (12-18-24 mm). Types of long pasta that can be made: tagliolini, tagliatelle, pappardelle, with plain and festooned edges. Description
Monferrina Nina is a table-top machine, ready to use and easy to operate. In fact, in a single body, it can produce puff pastry with adjustable thickness and noodles of two different widths: 2 mm and 6 mm.
Nina is available in two models: 170 and 250 distinguished by the two sheet widths obtainable (170 mm and 250 mm).
Furthermore, this roller dough sheeter is versatile because it can be combined with a whole series of accessories (on request) that make it a complete pasta machine.
It has an anodised aluminium outer structure and stainless steel parts in contact with the dough. It also includes a safety button and power indicator light.
This machine is also equipped with a practical door that allows the dough to be pulled out if necessary.
Finally, the Nina professional pasta sheeter is equipped with the new user finger protection grids.
Maintenance required for the Monferrina Nina professional pasta machine
The La Monferrina Nina pasta machine requires no special maintenance! It is a production machine that can be put through its paces without fear of major component wear.
Special care must be taken exclusively not to place sharp objects inside the rollers. These are made of soft materials and contact with points and hard objects can scratch them.
After each use, it is advisable to clean the rollers of the sheet and the dies with a kitchen brush, letting any dough residue fall off.
The scrapers on this machine are specially designed to be able to withstand it should any dough residues remain inside.
The press and ravioli accessories, on the other hand, require more care to maintain the various components.
Stainless steel and anodised aluminium parts can, if necessary, be cleaned with a non-aggressive HACCP steel cleaner.
Differences between the Monferrina Nina dough sheeter and the Imperia Restaurant dough sheeter
The sheeter Imperia Restaurant is a 210 millimetre sheet machine specifically designed to sheet and draw long pasta. This type of machine cannot mount different accessories than the individual Imperia Simplex Restaurant dies for long pasta, it cannot make ravioli or gnocchi. The sheet output is around 12 kg/h. The total weight of the machine is 15 kg and the power of the motor supplied is 190 watts.
Conversely, the Monferrina Nina dough sheeters can make 170 millimetre or 250 millimetre sheets of dough. Obviously, these are two different dough sheeters that are purchased separately. The motor power is 4 times higher, at 750 watts!
In addition, the Monferrina Nina sheeter weighs twice or three times as much as a Restaurant Imperia. This is because the Nina is manufactured with plenty of stainless steel and anodised aluminium. This guarantees higher productivity in the long run. In fact, output per hour is more than double!
Monferrina Nina is supplied with two 2/6 cutting dies, while the Imperia Restaurant dies must all be purchased separately.
Last but not least, Monferrina Nina is extremely modular. In fact, additional accessories can be fitted for the production of filled pasta, such as ravioli, or for gnocchi, as well as the press unit or kneading trough
