Description
Vacuum bags must be durable, airtight and suitable for contact with food. In fact, REBER triple-layer bags meet all these requirements:
- the polyethylene interior is suitable for contact with the contained foodstuff;
- the polyamide outer layer ensures airtightness;
- the middle layer, still made of polyethylene, makes the bag more resistant to perforation or tearing, prevents moisture penetration, reduces the formation of frost and ice crystals in the freezer.
The special imprints (patented system) on the surface facilitate the escape of air and the creation of a true vacuum.
Certified embossed vacuum bags and pouches for low-temperature cooking
REBER vacuum bags are also certified to be used for low-temperature vacuum cooking. Vacuum cooking is a cooking technique from France. It is in fact also called sous vide cooking. It consists of cooking products directly in the vacuum bag in water, normally at temperatures lower than 100 degrees centigrade, for several hours (depending on the type of food).
Cooking takes place without the food coming into direct contact with the water. In this way, the cooking liquid (water) does not interact directly with the food. This prevents food nutrients from being lost in the water, thanks to the protection offered by the bag.
Contrary to what other products claim, REBER vacuum bags are actually certified! In fact, REBER vacuum bags are tested to withstand the following temperatures:
- up to a maximum of 100 °C for a maximum of 4 hours
- up to a maximum of 60 °C for a maximum of 8 hours
Embossing: what is it for?
La embossing is a thermal process of film processing of which vacuum bags are made. It consists of modifying the polyethylene structure of one layer of the bags in order to impregnate it with a particular surface pattern. This processing neither adds nor removes material but simply changes the shape.
Why is it necessary to emboss the vacuum bag? The reason is simple. This process is in fact necessary to create gaps inside the bag from which air can escape. In fact, in an externally suctioned vacuum machine, the vacuum is only carried out in a small chamber (called the vacuum chamber). Inside this are the extreme edges of the bag, i.e. the open part. If the vacuum bag were smooth, the two flaps would touch at all points due to the pressure of the machine lid which is used to close the vacuum chamber. At that point, air would no longer be able to be drawn out of the bag and, therefore, suction would not occur.
The embossed inner part, on the other hand, allows for suction and, at the same time, guarantees the possibility of welding well after suction is completed.
Vacuum pack layers: what are they for?
REBER embossed vacuum bags and pouches for food are co-extruded multilayer products. This means that each flap of the bag, i.e. each sheet, is on the inside made up of several layers. They are extruded at the same time, i.e. at the stage where the polyethylene and polyamide polymer is processed into reels.
The REBER vacuum bag features a double layer of polyethylene and a middle layer of polyamide. The polyethylene is the ideal material to come into contact with food. In fact, it is particularly stable, does not absorb oil and prevents the formation of mould and moisture inside the bag. The polyamide, on the other hand, is the material that provides the barrier effect but is sensitive to moisture. For this, it is insulated between two layers of polyethylene. The vacuum bag, therefore, can benefit from the combined effect of two quality plastic materials to ensure food preservation.
How to use the vacuum bag correctly
The use of vacuum bags is extremely simple and free of any difficulty. Nevertheless, it is worth pointing out some particularities of this product, which may be useful when using it.
Firstly, the vacuum bag is particularly thick compared to other types of plastic commonly used in the home. For this, its sealing requires machines with special sealing bars. The vacuum machinesIn fact, they are equipped with more powerful sealing bars than normal sealing machines, precisely so that each bag can be sealed optimally. The sealing of the vacuum bag depends solely on the quality of the sealing bar of the vacuum machine used. Failure to seal a vacuum bag is only due to the fact that the vacuum machine cannot do it. In such cases, we recommend trying several times to get the sealing bar up to temperature or adjusting the machine for longer sealing times, if possible.
If, on the other hand, you have the impression that the machine does not vacuum well, we recommend following these two simple steps:
- adjust the vacuum bag flaps well inside the vacuum chamberas close as possible to the nozzle from which the air is drawn;
- support the vacuum bag at the bottom so that it does not form loops but remains parallel to the work surface. This makes it easier for the machine to suction.
