How to use the Reber manual pasta machine
Making puff pastry and dough with the Reber manual pasta machine is simple, but requires attention to detail to achieve a perfect result.
Prepare the dough, preferably with flour, water and eggs. Fresh pasta with egg is important because it provides the binding agent that prevents the dough from tearing.
The dough has to be kneaded and left to rest for about 30 minutes. Then you can start to roll it out with the sheeter, to make it compact and homogenous thanks to its smooth rollers.
It is always a good idea to start with a higher thickness and then thin it out to avoid straining the crank. It is advisable to use flour on the dough to prevent it from sticking too much to the machine rollers.
Once the desired thickness has been obtained, if you have also purchased the die, you can pass the obtained sheet through the die to obtain the desired type of long pasta.
