Main models of Monferrina pasta machines
When choosing Monferrina pasta machines, the customer can choose between extrusion or roller machines. The extrusion machines push the dough outwards after kneading. The roller machines make the dough sheet after kneading.

Maintenance required for Monferrina machines
The La Monferrina pasta machine requires no special maintenance! It is a production machine that can be put under stress without fear of particular wear and tear on its main components.
Special care must be taken exclusively not to insert sharp objects into the dies.
Once used, the presses will always contain some dough residue inside. Since they are presses, some residue will always remain inside. But this is not a problem with proper maintenance.
In fact, it is only important to ensure that the dough left inside does not dry out. Therefore, after cleaning the outside of the dies, DO NOT use any objects but only a cloth. After disassembling them, you must avoid drying out the dough inside. We therefore recommend soaking the Monferrina bronze pasta dies in water, so that the dough inside remains soft. If you do not plan to use the Monferrina bronze dies for a long period of time, it is advisable to place them in the freezer and then soak them for a while before using them again.
Shaft and auger in the tank, on the other hand, can be safely washed in the dishwasher.
Stainless steel and anodised aluminium parts can, if necessary, be cleaned with a non-aggressive HACCP steel cleaner.

What are the differences between cylinders and presses?
The Monferrina range is characterised by pasta machines of two different types: cylinders and presses.
Cylinder machines, also known as sheeters, are those characterised by the presence of rollers that allow the pasta sheet to be obtained and then drawn. Rollers typically cut the sheet into long pasta, such as spaghetti, chitarra, tagliatelle, etc. Generally, cylinders can work with pasta with a lower moisture content, usually kneaded with a binder that allows for greater elasticity of the sheet.
Conversely, the presses are characterised by the possibility of kneading the mixture before obtaining the sheet. They are all equipped with a kneading tank, of varying capacity, which works with a very coarse, granular dough. Flour, water and possibly additional ingredients, such as eggs or vegetables to colour the dough, can be mixed in the bowl. The recommended amount of water is about 320 grams per 1000 grams of flour, so a ratio of 1:3. The obvious advantage of the presses is that it is also possible to obtain short pasta and not only long shapes.
The choice on the part of the restaurateur must be made according to the intended use. Sheeters are usually chosen when the dough is made by hand or by other mechanical means and a more rough, especially long, home-made pasta is desired. Conversely, presses are chosen when one wants to make mainly short pasta, usually a little wetter, with a more special preparation in which making the pasta sheet is of less importance.
It is also clear that sheeters can also be used to obtain the sheet of pasta with the appropriate die. Conversely, the sheet of pasta obtained through a press, although it can be of various thicknesses, will have a different finish, different thicknesses and not the same quality as that obtained with cylinders.
